Corn and Heart Health Study
Investigators from the Nutrition Program at Arizona State University are recruiting healthy individuals, ages 18–70 y, for a study investigating the effect that various corn flours have on blood cholesterol.
To qualify, you should not have been diagnosed with diabetes or cardiometabolic conditions; have any GI disorders; have any allergy to food (e.g. milk, wheat, gluten, corn, egg, etc.) or supplements; have gastrointestinal conditions such as Crohn’s or celiac disease; or currently have hypertension. Female participants should not be pregnant, lactating or planning to become pregnant during the study. Study participation will take approximately 16 weeks of your time, over 7 study visits and 3-4 visits per week to pick up the muffins and/or pita bread. Multiple blood draws are required at each study visit, along with consumption of prepared standardized study meals. Compensation with a $300 gift card is available for time and effort.
